🍲BEAN SOUP WITH CROUTONS🥖

👇 INGREDIENTS:

  • 1 tbsp vegetable oil
  • 1 red onion, chopped
  • 4 garlic cloves, chopped
  • 1 tsp salt
  • Black pepper to taste
  • 2 tsp turmeric
  • 1.5 L vegetable broth
  • 150 g cooked or canned red lentils
  • 3 large handfuls of spinach, chopped
  • 1 can of cooked or canned chickpeas
  • 1 can of canned red beans
  • 1.5 tsp dried mint (optional)
  • Juice of 1/2 lemon
  • Sour cream or natural yogurt for serving
  • Two large pieces of any bread for croutons

👇 HOW TO COOK 👇

1️⃣ In a pot, fry the onion in oil for 7-8 minutes.

2️⃣ Add garlic, salt, pepper, and turmeric. Stir and cook for about a minute.

3️⃣ Add broth, lentils, and spinach. Simmer for about 25 minutes.

4️⃣ Add beans, chickpeas, mint, and lemon juice. Cook for another 7-8 minutes. Season to taste.

5️⃣ Preheat the oven to 356°F (180°C). Cut the bread into cubes.

6️⃣ Grease a baking sheet with vegetable oil. Place the bread on it. Sprinkle with salt and pepper. Drizzle with oil.

7️⃣ Bake the croutons for 5 minutes. Then flip and bake for another 5-10 minutes.

8️⃣ Serve the soup with croutons and sour cream or yogurt.
