Ingredients:
- 1½ cups all-purpose flour
- 1½ cups whole wheat flour (whole wheat pastry flour recommended)
- 1 teaspoon baking soda
- ¾ teaspoon baking powder
- 1 teaspoon sea salt
- 1 cup nondairy milk
- 4 teaspoons apple cider vinegar
- 125g fresh spinach (about two cups, packed)
- Optional: rolled oats, sunflower seeds, or caraway seeds for topping
Baking the Perfect Green Loaf:
- Preparation: Preheat your oven to 425°F (220°C) and get your baking sheet ready.
- Mix Dry Ingredients: In a large bowl, combine both types of flour, baking soda, baking powder, and salt.
- Blend Wet Ingredients: In a blender, mix nondairy milk, vinegar, and spinach until smooth. Mix this green blend with the dry ingredients until just combined.
- Shape and Bake: Divide the dough into three small loaves or one large loaf. Dust with flour, place on a baking sheet, and make a shallow “X” on top. Optionally, brush with the spinach/milk mixture and sprinkle your choice of seeds or oats.
- Baking Time: Bake for 30-35 minutes or until the loaves are slightly browned and crusty on top. Cool under a clean dish towel to keep the bread tender.
Chef’s Notes:
- Size Variations: This recipe yields three 5-6 inch loaves. Adjust baking time if opting for a different size.
- Serving Suggestion: Enjoy fresh with vegan butter, preserves, or a drizzle of olive oil.
- No Added Fats: Best enjoyed on the day it’s made for optimal freshness.
- Customizable: Not a fan of spinach? Omit it and add an extra ¼ cup of nondairy milk.
