🍝SOBA🍝 NOODLES WITH SESAME AND BASIL

👇 INGREDIENTS:

  • 170 g soba noodles
  • 1 tbsp sesame oil
  • ¾ cup fresh peas
  • 1 tbsp tamari or more to taste
  • 1 bunch of fresh basil
  • ½ cup grated Parmesan cheese
  • A pinch of red pepper flakes
  • Ground black pepper to taste
  • Juice from one large lemon

👇 HOW TO COOK 👇

1️⃣ Prepare the soba noodles according to the package instructions (usually about 6-9 minutes).

2️⃣ Drain the noodles, keeping the water boiling for the peas. Transfer to a large bowl and mix with sesame oil. Set aside.

3️⃣ Prepare a bowl with ice water and place it next to the pot with boiling water. Cook the peas for 1 minute, drain and plunge into the ice water. Drain again and add to the bowl with noodles.

4️⃣ Add tamari, basil, cheese, lemon juice, red and black pepper. Mix well and add more tamari and cheese to taste.
