🧆VEGAN MEATBALLS WITH MUSHROOMS AND NUTS🧆

👇 INGREDIENTS:

  • 450 g mushrooms, sliced
  • 1 cup walnuts
  • 1 yellow onion, roughly chopped
  • 2 cloves of garlic, minced
  • ½ tsp salt
  • ½ tsp freshly ground black pepper
  • ½ tsp ground cumin
  • ½ tsp smoked paprika
  • 1.5 cups cooked or canned beans, rinsed and dried
  • ¼ cup rolled oats
  • 1 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tbsp ground flax seeds
  • 1 tbsp tamari
  • 1 tbsp balsamic vinegar
  • ¾ cup breadcrumbs
  • Avocado oil for frying
  • Marinara sauce for serving

👇 HOW TO COOK 👇

1️⃣ Preheat the oven to 392°F (200°C) and line a baking sheet with parchment paper.

2️⃣ Place mushrooms on the sheet, drizzle with olive oil, sprinkle with salt and pepper. Mix. Spread evenly on the sheet and bake for 20 minutes.

3️⃣ In a food processor or blender, combine walnuts, onion, garlic, salt, pepper, cumin, and paprika. Pulse to coarse crumbs.

4️⃣ Add roasted mushrooms, beans, oats, olive oil, tomato paste, flax seeds, tamari, and balsamic vinegar. Process until the mixture is uniform but not too smooth.

5️⃣ Transfer the mixture to a large bowl. Using a tablespoon, portion the mixture, then roll it into balls with your hands.

6️⃣ Heat a large skillet over high heat and coat the bottom with avocado oil. Add the vegan meatballs and cook, turning the balls, until they are browned, about 5 minutes.

7️⃣ Transfer the skillet to the oven and bake for 20 minutes, until the meatballs are slightly crispy on the edges. Serve with marinara sauce.
