Green Pea Soup Puree

Green peas are rich in fiber, exactly what we need in our diet in spring!☀️

Ingredients:

  • 500g of frozen or fresh green peas
  • 1 large potato
  • 1 tbsp of frying oil
  • 1/2 tsp of asafoetida
  • 1/4 tsp of spices for taste
  • 1/4 tsp of ground black pepper
  • 1 bunch of fresh greens
  • 2 tbsp of unrefined oil

How to cook:

  1. Boil 1 liter of water;
  2. Separate the greens into stems and leaves: finely chop the stems, leave the leaves;
  3. Dice the potato;
  4. Fry spices in a small amount of oil;
  5. Add potatoes and fry for 1-2 minutes;
  6. Add peas and chopped stems, cover with a lid;
  7. When the vegetables start to emit moisture, pour boiling water (for a thick soup, level with the vegetables; for a liquid soup, a finger above the vegetables);
  8. Bring to a boil and cook for 15 minutes, until the potatoes are soft;
  9. Season with salt, remove from heat;
  10. Puree with a blender, adding unrefined oil, and season with black pepper;
